It all started with the Corona Virus

I suppose I have the Corona virus to thank for this. Just like millions of others out there, it’s taken a pandemic for me to get round to starting a blog, well actually, to build a website for the cakes and then add some words of encouragement? Not quite sure what I should be writing but I’m currently at my dining room table (husband is upstairs) I’ve got my headphones on and Manic Street Preachers keeping me company and I’ve just put a cake in the oven. Now, you probably expect me to be baking every day, of course that’s not true, there’s only two of us and if I don’t want my ever-expanding backside to reach small-family-car proportions. I have to resist eating delicious, comforting, freshly-baked treats on a daily basis. That said, if an interesting recipe pops up then in the interest of research, I will apply myself and get in the kitchen.
So, today, a water cake came to my attention and in these trying times where certain ingredients are being fought over in supermarkets by two gladiatorial barbarians that would normally describe themselves as being mild-mannered (one being a landscape gardener, the other an office manager for a soft furnishings company), it seems that perhaps we should be looking at other ways to bake that require different or more readily available ingredients. Suffice to say, a water cake sounds like the way to go, however, it doesn’t sound very appealing, does it? I mean it sounds, well, a bit watery? Anyhow, I’ve got it in the oven now so we shall see in half an hour. I shall post the recipe and pictures because that’s what a responsible blogger does.
As far as all this isolating goes though, so far so good. I’m usually at home most of the time anyway, either baking cakes for other people (that’s on hold for now) or working on the next radio show (that’s also on hold for now) or shovelling shit for the goats (that’s often on hold over winter till it warms up……it hasn’t warmed up enough yet) It’s not that they don’t shit through the winter but the cold weather means no stinky, nastiness to worry about. Oh, I’m now listening to the soundtrack to ‘The Thomas Crown affair’ Steve McQueen version. But, as I was saying, I’m usually home so it’s not such a big deal for me. With husband upstairs, I can carry on as normal without him under my feet and reducing me to a homicidal maniac. Which is fortunate, I would say. I’ll be back soon with the cake………
Not impressed. OK, I knew when I made it that it had a texture more like a bread dough but it definitely doesn't look like the picture. I shall wait for it to cool down and try it. To be fair it wouldn't be the first time I've modified a recipe after I've found it doesn't work as well as expected. ***Please note, modification often comes in the shape of pouring chocolate sauce over a baking disaster. It is my go-to foodie rescue. Here's the link to the recipe and you will see the difference. https://www.lacucinaitaliana.com/trends/healthy-food/how-to-cook-water-cake-no-eggs-no-milk-no-butter
